The fact that there is a distinction between “simple” and “easy” is all brand new to me – and apart from sparking contemplation about life in general, this statement made me want to try making the soup.

Yet, I bet when Ms.Powell wrote this, she had never tried making Thai curry paste from scratch!!! I could say with certainty because I made both. 

Julia Child’s Potato and Leek Soup (Potage Parmentier - recipe here) which, despite the simple ingredients: potatoes, leek, water and salt simmered all together for 40-50 minutes – is marvelously delicious.  The only not-so easy part is when you have to mash the potatoes with fork – which is really fine with me.  I always like my soup chunky.  A bit of cream is mixed in before serving.  And yes! It’s just heavenly and comforting.  I never cared much about leek nor potatoes before, but this classic soup changed my mind completely.

For the Green Curry Paste (recipe here), the list of ingredients is also very simple: garlic, shallots, lemongrass, galangal, fennel, coriander seeds, Thai chili, shrimp paste, and salt.


BUT I had to pound them with pestle and mortar by hand for what seemed like forever to get the paste shown here -- not as fine and smooth as what you usually see coming from a can or sold in fresh markets in Thailand.


Food processor did not work well in this case, I found.  So now I know why the ability to make smooth curry paste used to be one of the many qualifications sought after in potential daughter in laws in the old Siam.  Your patience and perseverance is put to a test! Big time! Much like marriage I supposed :)

If making Potage Parmentier is nowhere near easy, making green curry paste is climbing Mt. Everest in my book.  I don’t know if I’d every make it again soon, but at least I know that I can now.

Simplicity in life may not be easy to achieve, but it’s well worth a try.

 

 

 

 

หลังจากที่ประสบความสำเร็จในการทำขนมปังยีสต์แบบง่ายๆ ด้วยแป้งอเนกประสงค์แล้วก็เกิดฮึกเหิม อยากทำขนมปังไร (Rye) เพราะชอบทาน และยังมีกลูเตนต่ำกว่าขนมปังแป้งธรรมดาด้วย ใช้สูตรเดิมที่ใช้ทำ ขนมปังยีสต์แบบง่าย เอามาปรับและลดลงทำแค่ครึ่งสูตรนะคะ จะได้ขนมปัง 1 ปอนด์  (ขนมปังนี้จะออกมาเป็นแบบ บาแก็ท ของฝรั่งเศสที่นุ่มใน แต่ขอบแข็งนะคะ)

ส่วนผสม (ทำขนมปังขนาดปอนด์ย่อมๆ ได้ 1 ปอนด์):

1. แป้งอเนกประสงค์ 1 1/2 ถ้วยตวง
2. แป้งไร 1 1/2  ถ้วยตวง  (Rye flour หรือ Rye Meal - หาซื้อได้ตามซูเปอร์มาเก็ตที่ขายของที่ตักขายแบบไม่ใส่หีบห่อ (bulk) อย่าง Whole Foods หรือ Berkeley Bowl -- ซูเปอร์ทั่วไป ไม่ทราบว่ามีหรือเปล่านะคะ)
3. ยีสต์แห้งแบบขึ้นเร็ว (highly active yeast) 1 ช้อนโต๊ะ
4. น้ำตาลทรายแดง 1 ช้อนโต๊ะ
5. เกลือโคเชอร์ (kosher salt) หรือเกลือป่นธรรมดา 1/2 ช้อนโต๊ะ
6. น้ำร้อนจัด (50-55 องศาซี)  1 ถ้วยตวง
7. น้ำร้อน ใส่ในถาดอบแก้ว หรือ ถาดอบเค้ก
8. เมล็ดยี่หร่า (fennel or caraway) ไว้โรยหน้า หรือจะไม่โรยก็ได้

คนแป้งทั้งสองอย่างให้เข้ากัน  แล้วแยกแป้งที่ผสมแล้ว  2 ถ้วยตวง เข้ากับ ยีสต์ น้ำตาล เกลือ ให้เข้ากัน เทน้ำร้อนที่อุณหภูมิ 50-55 องศาซี ลงไป ตีด้วยไม้ตีไข่ 100 ครั้ง หรือด้วยมิกเซอร์ 3 นาที

เทแป้งที่เหลือลงไปแล้วคนให้เข้ากันจนแป้งหายแฉะ เทแป้งลงไปบนบริเวณที่จะใช้นวด ที่โรยแป้งรอไว้ นวดไป 8 นาที แล้วใส่ลงไปในหม้อที่ทาเนยไว้ เอาผ้าหมาดๆ อุ่นๆ คลุมไว้ ตั้งไว้ในที่อุ่นๆ ไม่มีลมให้แป้งขึ้น

พอครบ 15 นาที เอากำปั้นต่อยตรงกลางแป้งให้แฟ่บลง แล้วตบๆ ให้เป็นรูปปอนด์ แต่อย่าปั้นมากนัก

เอาแป้งใส่ลงในถาดอบแบบปอนด์ (loaf pan) ที่ปูกระดาษพาร์ชเม้นท์ไว้ (ถ้าจะโรยยี่หร่า ก็โรยตอนนี้) แล้วเอาเข้าไปวางตรงชั้นกลางของเตาอบที่เย็นอยู่ 

ในถาดอบทนไฟ ขนาดซัก 12x14 นิ้ว หรือถ้าไม่มีใช้ขนาดไหนก็ได้ อีกอันหนึ่ง เทน้ำเดือดลงไป (วิธีนี้ เหมือนการทำ bain-marie เพื่อให้มีไอน้ำเวลาอบ ขนมปังจะได้นุ่ม)  แล้วเข้าไปวางในชั้นล่างของเตาอบ เปิดเตาอบที่ 400 องศาเอฟ (ประมาณ 200 - 205 องศาซี) อบ 40-50 นาที หรือจนเป็นสีเหลืองทอง (วิธีเช็คว่าสุกหรือยัง ให้ลงตบข้างใต้ขนมปังดูว่ามีเสียงกลวงๆ แสดงว่าสุก)

เสร็จแล้วเอาออกทิ้งให้เย็นสนิทบนตะแกรง ก่อนห่อเก็บ -- ขนมปังสามารถเข้าช่องฟรีซไว้ได้ถึงสามเดือนค่ะ

Stir in the remaining flour mixture until the dough loses its stickiness.  Turn onto a floured surface. Knead for 8 minutes.

Place dough in a greased bowl and cover with a warm damp cloth.  Let rise for 15 minutes in a warm spot (away from drafts).

Punch down and while trying not to over handle the dough, shape it roughly into a loaf and put in loaf pan that's lined with parchment paper or greased.

Place the loaf pan in the middle of a COLD oven.   Place a pan of hot water on the lowest shelf. Heat the oven to 400 degrees F and bake 40-50 minutes until golden brown.  Let cool completely before wrapping and/or storage.

To check the bread's doneness, tap the bottom of the bread and check for hollow sound.  Read more at theKitchn.

“Hmmmm. That would be a perfect way to start my Sunday”, I grinned as the imaginary light bulb blinking brightly over my head.



I turned on the oven, heated the skillet on the stove, popped the eggplant in the oven, and turned to the sink to start deveining my plump tiger prawns.  I must have taken too long, or had on too much heat, but when I tossed a big cube of butter into the skillet, it was too late… “Arghhhhhhhhhhhhhhhhhhh!!!! ” I groaned while tossing the prawns in quickly and the skillet sent out a very loud, pleasing hiss and buttery aroma, but then…

ขอบอกว่าอร่อยมาก ทั้งๆ ที่ไม่ต้องผัดน้ำมันอะไรเลย มีแต่เหยาะน้ำมันงาตอนก่อนเสริฟเท่านั้น ไม่น่าเชื่อว่าจะอร่อยและเข้ากันมาก

ส่วนผสม (สำหรับ 6 ที่)

ถั่วเขียว split peas 3 ถ้วย
น้ำประมาณ 7 ถ้วยตวง (หรือมากกว่านั้น)
ใบกระวาน (Bay Leaf) 1 ใบ
เกลือ 2 ช้อนชา
มัสตาร์ดผง 1/2 - 1 ช้อนชา
หอมหัวใหญ่ สับละเอียด 2 ถ้วยตวง
กระเทียบ 4-5 กลีบ บุบหยาบๆ
เซเลอรี่ 3 ก้าน ซอยละเอียด
แครอทขนาดกลาง 2 หัว ซอยบางๆ หรือหั่นเป็นลูกเต๋า
มันฝรั่งขนาดกลาง 1 หัว ฝานบางๆ
พริกไทย
น้ำส้ม red wine vinegar ถ้าไม่มีก็ใส่น้ำส้มสายชู

สำหรับโรยหน้า
น้ำมันงา
มะเขือเทศสุกๆ
พาร์สลี่ฝรั่ง หรือ ผักชี

1. เอาถั่วเขียว น้ำ ใบเบย์ เกลือ กับ มัสตาร์ด ใส่หม้อ ต้มจนเดือน แล้วหรี่ไฟอ่อนๆ  ปิดฝาแง้มๆ ต้มต่อไปประมาณ 20 นาที
2. ใส่หอม กระเทียม เซเลอรี่ แครอท และ มันฝรั่ง ต้มไฟอ่อนๆ ต่อไป 40 นาที หมั่นคน ไม่ให้ถั่วติดก้นหม้อ เติมน้ำ ถ้าต้องการ
3. ปรุงด้วยพริกไทย น้ำส้ม ตามชอบ
4. ตักใส่ถ้วย เหยาะหน้าด้วยน้ำมันงา มะเขือเทศ พาร์สลี่หรือผักชี

I love fresh fruit pastry cream tartlets and finally mustered enough courage to make them.  Got the recipe from The Joy of Cooking (pp. 866-867).

I tried the "pat-in-the-pan butter crust" (p.867) and love it.

Ingredients for the crust (makes about eight 3 1/2 inch tartlet crusts)

1 1/2 cups all-purpose flour
1/2 teaspoon salt
8 Tablespoons (1 stick) unsalted butter softened, cut into 8 pieces
2-3 Tablespoons heavy cream (I used 1% milk)

Directions:

1. Place the rack in the middle of the oven, preheat to 400'F.
2. Whisk together flour and salt until combined
3. Add butter.  Mash the back of a fork or pastry blender until the mixture resembles coarse crumbs.
4. Drizzle over top the milk (cream)
5. Stir untill the crumbs look damp and hold together when pinched.
6. Transfer the mixture to the tartlet pans. Pat evenly over the bottom and sides with your fingertips. Prick the bottom and the side with a fork
7. Bake until the crust is golden brown, 18-22 minutes, pricking the bottom once or twice if bubbles.
8. Let cool completely.  Glaze bottom with jam or syrup if desired.
9. Refrigerate for 10 minutes to set the glaze.

Ingredients for the pastry cream (Crème Pâtissière) - p.996:

1/3 cup sugar
2 Tablespoon s all-purpose flour
2 Tablespoon cornstarch
4 large egg yolks
1 1/3 cups milk
1 vanilla bean, split (optional) or 3/4 teaspoon vanilla

Directions:

1. In a medium bowl, beat on high speed until thick and pale yellow, about 2 minutes sugar, flour, cornstarch, egg yolks.
2. Meanwhile, combine milk and vanilla bean in a medium stainless-steel or enamel saucepan and bring to a simmer.
3. Fish out the vanilla bean if you used it.  Gradually pour about one-third of the hot milk into the egg mixture, stirring to combine.
4. Scrape the egg mixture back into the pan and cook, whisking constantly and scraping the bottom and corners of the pan to prevent scorching, over low to medium heat until the custard is thickened and begin to bubble.  Then continue to cook, whisking, for 45 to 60 seconds.  Using a clean spatula, scrape the custard into a clean bowl.  If you have not used the vanilla bean, stir in the vanilla extract.
5. Cover the surface of the custard with a piece of wax or parchment paper to prevent a skin from forming.  Let cool, then refrigerate before using.  This keeps, refrigerated, for up to 2 days.

 To assemble the tart:

1. Spread the pastry cream evenly over the crust.
2. Arrange over the cream some small berries, sliced strawberries, thinly sliced fruits
3. If you wish, brush the fruit lightly with 2-3 tablespoons jelly, melted
4. Or dust the tart lightly with powdered sugar before serving.
5. If not serving immediately, store in the refrigerator for no longer than 6 hours.

Another recipe I finally dare to make.  Found recipe from www.food.com and made a little adjustment.

Ingredients

        2 1/2 cups flour
        1 teaspoon baking powder
        1/2 teaspoon salt
        1 1/4 cups sugar ( can use another 1/4 cup more for a sweeter taste)
        1/2 cup butter (1 stick), room temperature
        2 large eggs
        1 1/2 teaspoons almond extract (I used Amaretto / almond liqueur)
        1 1/2 cups dried cranberries
        1/2-3/4 cup almonds ( chopped or sliced)
        1 egg whites
        8 ounces white chocolate

Directions

1. Set oven to 350 degrees.
2. Line a baking sheet with parchment paper.
3. In a bowl whisk together flour with baking powder and salt.
4. Using an electric mixer beat the butter, sugar and eggs with extract until well blended (about 4 minutes).
5. Add in the flour mixture, then the cranberries and almonds; mix well to combine.
6. Divide the dough in half.
7. With floured hands shape the dough in about 9 x 2-inch logs.
8. Transfer the logs to prepared baking sheet, spacing evenly.
9. In a small bowl whisk the egg white until foamy, the brush the egg white on top and sides of each log.
10. Bake the logs until golden brown, about 35 minutes (the logs will spread when baked).
11. Cool completely in the baking pan (leave the oven heat on to 350 degrees).
12. Transfer the logs to a work surface.
13. Shake out any crumbs from the parchment paper, then place back on the baking sheet with clean-side facing upwards.
14. Using a serrated knife, sliced the logs on diagonal about 1/2 - 3/4-inches.
15. Arrange the sliced biscotti cut side down on the same baking sheet.
16. Bake for 10 minutes; turn the biscotti over and bake for another 5 minutes, just until beginning to lightly brown.
17. Transfer biscotti to a rack to cool.
18. For the glaze: stir the white chocolate in a double boiler over simmering water until smooth.
19. Remove from over the water.
20. Using a fork, drizzle chocolate over biscotti.
21. Let stand until chocolate sets (about 30 minutes).

โอเคค่ะ ตกลงได้ลองรอจนวันรุ่งขึ้นให้มั่นใจแล้วว่าขนมปังทานได้อร่อยดีแน่ๆ ถึงค่อยมาเขียนเป็นภาษาไทยอีกที สูตรนี้ใช้แป้งอเนกประสงค์ (all-purpose flour) ธรรมดา และปล่อยให้แป้งขึ้นแค่ 15 นาทีนะคะ ง่ายกว่าที่คิดไว้มาก

5. เกลือโคเชอร์ (kosher salt) หรือเกลือป่นธรรมดา 1 ช้อนโต๊ะ
6. เกลือทะเล เกล็ดใหญ่หน่อย เอาไว้โรยหน้า แต่จะไม่โรยก็ได้
7. น้ำเดือด 2 ถ้วยตวง
8. น้ำร้อน ใส่ในถาดอบแก้ว หรือ ถาดอบเค้ก

เอาแป้งวางลงบนถาดอบคุ้กกี้ที่ปูกระดาษพาร์ชเม้นท์ไว้ แล้วเอาเข้าไปวางตรงชั้นกลางเตาอบที่เย็นอยู่ เอาน้ำร้อนใส่ถาดอบทนไฟ หรือ ถาดอบเค้ก เข้าไปวางในชั้นล่างของเตาอบ เปิดเตาอบที่ 400 องศาเอฟ (ประมาณ 200 - 205 องศาซี) อบ 40-50 นาที หรือจนเป็นสีเหลืองทอง (วิธีเช็คว่าสุกหรือยัง ให้ลงตบข้างใต้ขนมปังดูว่ามีเสียงกลวงๆ หรือยัง

So I did it!! My first time breaking yeast bread and I'm so excited.  I've always wondered if all-purpose flour can be used instead of bread flour and finally found this great and simple recipe from The Culinary Chronicles.  I made some adjustment as follows:

Ingredients:

5 Cups All Purpose Flour
2 Tablespoons Dry Yeast
2 Tablespoons Brown Sugar
2 Teaspoons Herbes de Provence (optional)
1 Tablespoon Kosher Salt
Sea Salt (optional)
2 Cups Hot Water (120-130 degrees F.)
A pan of hot water

Mix 3 cups of the flour with the yeast, sugar, herbs and salt.  Pour in the hot water and beat 100 strokes (or 3 minutes with a mixer).

Stir in the remaining flour until the dough loses its stickiness.  Turn onto a floured surface. Knead for 8 minutes.

Place dough in a greased bowl and cover with a warm damp cloth.  Let rise for 15 minutes in a warm spot (away from drafts).

Punch down and divide the dough into two pieces.  Shape into round loaves and place on a greased baking sheet.  Cut an “X” one-half inch deep in each of the loaves with a wet sharp knife. Sprinkle the tops with sea salt.

Place baking sheet with loaves in the middle of a COLD oven.   Place a pan of hot water on the lowest shelf. Heat the oven to 400 degrees F and bake 40-50 minutes until golden brown.  Let cool completely before wrapping and/or storage.

Since this is my first time, it's hard to determine if the bread is done.  And I found great advice on how to check if the bread's doneness at theKitchn.  I just tapped the bottom of the bread and check for hollow sound.

Once the bread is out of the oven, I couldn't wait and had to have a bite.  It tastes wonderful.  I'm so proud of myself :)

ฟ้าใสมาหลายวัน จู่ๆ มาวันนี้ฝนตกอีกแล้ว น่าประหลาดที่สุดที่อารมณ์คนเราช่างขึ้นลงตามไปกับแสงอาทิตย์ซะจริง เวลาอากาศหนาวๆ ฟ้ามัวซัว ฝนตกพรำ ไม่มีอะไรจะดีไปกว่าการนอนอ่านหนังสือเล่มโปรด หรือดูหนังรักโรแมนติก พร้อมกับคลึงถ้วยโกโก้ร้อนในมือแล้วจิบไปให้อุ่นท้อง


พอพูดถึงเครื่องดื่มร้อนๆ ก็นึกถึง "เหล้ารัมเนยหวาน หรือ hot buttered rum" - สิ่งที่โปรดปรานมากและเหมาะกับอากาศเช่นนี้เสียนี่กระไร -- หาดื่มได้ยาก และถึงมีก็ไม่ค่อยอร่อย ตอนแรกคิดว่ายากมาก แต่พอหาสูตรในอินเตอร์เน็ทแล้ว เอ๊ะ แสนง่าย อุ๊ยยย เลยทำไว้หลายวันก่อน

สูตรก็ไม่มีอะไรมากนะคะ

น้ำตาลทรายขาว 1 ถ้วยตวง
น้ำตาลทรายแดง 1 ถ้วยตวง
เนยจืด1 ถ้วยตวง (หรือ 2 แท่ง)
ไอศครีมวนิลลา 2 ถ้วยตวง
เหล้ารัม
น้ำ
ผลลูกจันทน์ป่น (nutmeg)
ก้านอบเชย (ซินนามอน) ไว้แต่ง


วิธีทำ
1. เอาน้ำตาลกับเนยตั้งไฟอ่อนๆ คนเป็นระยะๆ จนเนยละลาย (พยายามอดใจที่จะไม่แอบเลียทัพพีไปเรื่อยๆ ด้วย เพราะมันคือคาราเมลกลิ่นหอมหวาน แฮ่ะๆ คือว่าตัวเองเป็นคนคลั่งคาราเมล)
2. ยกลง ใส่ไอศครีมลงไป ตีให้เข้ากันจนเนื้อเนียน กรอกใส่ขวดหรือภาชนะ เก็บไว้ในตู้เย็นได้ประมาณ 2 อาทิตย์ หรือ ถ้าแช่แข็งก็อยู่ได้ประมาณเดือนนึงค่ะ (แต่ของตัวเองอยู่ได้ไม่ถึงอาทิตย์เลย อิอิอิ เพราะแอบเอาใส่กาแฟด้วย แหมมันอร่อย :))
3. เวลาจะดื่ม ก็เอาเนยคาราเมลนี่ใส่ลงไปเหยือกกาแฟประมาณ 1/4 แล้วใส่เหล้ารัมไป 1-2 ช้อต (ซักสองกำลังอร่อย แต่สำหรับบางคนอาจแรงไป) แล้วก็เทน้ำเดือดตามไป คนให้เข้ากัน แล้วเหยาะผงลูกจันทน์โรยหน้า แล้วแต่งด้วยก้านอบเชย เป็นเสร็จพิธีค่ะ  บางคนไม่ดื่มเหล้า เอามาใส่กาแฟก็อร่อยมากๆนะคะ


โปรดระวัง มันอร่อยมาก อาจทำให้เกิดอาการเปิดตู้ไม่หยุดได้ อิอิ -- แต่ถ้าอากาศร้อนอาจไม่เหมาะเท่าไหร่ อาจปลอดภัยค่ะ 555

ช่างโชคดีที่วันฝนตกวันนี้ ยังพอมี Hot Buttered Rum ก้นขวดให้ได้อุ่นใจในวันฝนพรำ รสหวานละมุน และกลิ่นหอมกรุ่นของเหล้ารัม คาราเมล ปนเครื่องเทศ ช่วยให้มองสายฝนที่ไหลอ้อยอิ่งไปบนกระจกหน้าต่างได้อย่างไม่เหงาใจนัก <3

After a few days of bright sunshine, it starts to rain again today.  I'm always amazed of how mood changes drastically with the presence or lack-of sunshine.  On a cold, and rainy day, all you want to do is curling up with a good book or movie with a cup of hot cocoa or other beverage of choice in hand.


Talking about beverage of choice, another one of my favorite drinks for this kind of days is hot buttered rum. And it's one of those things that seem too complicated to make at home, but then once you look into it, is really a breeze.  A big hooray for the internet.

I found this recipe of Old Fashioned Hot Buttered Rum.


1 cup sugar
1 cup brown sugar
1 cup butter (2 sticks)
2 cups vanilla ice cream

1. Combine sugar, brown sugar and butter in a 2-quart saucepan. Cook over low heat, stirring occasionally, until butter is melted (6-8 min).
2. Combine cooked mixture with ice-cream in a large mixing bowl, and beat at medium speed, scraping bowl often until smooth (1-2 min). Store refrigerated up to 2 weeks or frozen up to one month (mine lasted about a week ;))

3. For each serving, fill one-quarter of a mug with mixture, add one ounce rum and three-quarters of a cup of boiling water. Sprinkle with nutmeg.



And you see, I got addicted to it in no time and finished my last batch today while watching the cold raindrops drifting down my window.  Somehow, the sweet, smooth, and warm taste helps make the gloomy day tolerable. <3

My French Apple Tart (Tarte aux Pommes) based on Barefoot Contessa's Recipe was very popular among friends today.  I did not make the pastry dough in food processor.  It's easy enough (in fact I find it easier) to make it by hand with pastry blender and spatula.

Ingredients
For the pastry:
2 cups all-purpose flour
1/2 teaspoon kosher salt
1 tablespoon sugar
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
1/2 cup ice water

 For the apples:
4 Granny Smith apples (I use Golden Delicious)
1/2 cup sugar
4 tablespoons (1/2 stick) cold unsalted butter, small diced
1/2 cup apricot jelly or warm sieved apricot jam (I used apple syrup made from apple peel)

2 tablespoons Calvados, rum, or water

Directions For the pastry,

Place the flour, salt, and sugar in the bowl. Stir to combine.

Add the butter and pulse 10 to 12 times, until the butter is in small bits the size of peas. With the motor running, pour the ice water down the feed tube and pulse just until the dough starts to come together. (I did this step with pastry blender)

Dump onto a floured board and knead quickly into a ball. Wrap in plastic and refrigerate for at least 1 hour. Preheat the oven to 400 degrees F.

Line a sheet pan with parchment paper. Roll the dough slightly larger than 10 by 14-inches. Using a ruler and a small knife, trim the edges. Place the dough on the prepared sheet pan and refrigerate while you prepare the apples.

Peel the apples and cut them in half through the stem. Remove the stems and cores with a sharp knife and a melon baler. Slice the apples crosswise in 1/4-inch thick slices.

Place overlapping slices of apples diagonally down the middle of the tart and continue making diagonal rows on both sides of the first row until the pastry is covered with apple slices. (I tend not to use the apple ends in order to make the arrangement beautiful.)

Sprinkle with the full 1/2 cup of sugar and dot with the butter. Bake for 45 minutes to 1 hour, until the pastry is browned and the edges of the apples start to brown. Rotate the pan once during cooking. If the pastry puffs up in one area, cut a little slit with a knife to let the air out. Don't worry! The apple juices will burn in the pan but the tart will be fine!

When the tart's done, heat the apricot jelly together with the Calvados and brush the apples and the pastry completely with the jelly mixture. Loosen the tart with a metal spatula so it doesn't stick to the paper. Allow to cool and serve warm or at room temperature.



When ready to serve, I cut the tart into pieces and served with Vanilla fat-free frozen yogurt (to lessen the guilt ;P); topped with rum-infused apple syrup instead of apricot jam with apple syrup made from apple peel, 1 cup of sugar and 1/2 cup of water (I think I got this from Alice Waters' Classic Apple Tart posted by Smitten Kitchen).

To add colors and more layers of tastes, I grated about 1/2 teaspoon zest from these fresh tangerines from my neighbor's garden.  The citrus aroma and a little bit of bitterness really balances out the sweetness perfectly.

พอทิ้งไว้จนเย็นลงพอสมควรแล้ว -- ตอนเสริฟ ตัดเป็นชิ้นสี่เหลี่ยม คู่ไปกับวนิลลาโฟรเซ่นโยเกิร์ต ราดด้วยน้ำเชื่อมแอปเปิ้ลที่เคยมีคนบอกให้เก็บเปลือกแอปเปิ้ลที่ปอกแล้ว ไปต้มกับน้ำตาลจนเป็นน้ำเชื่อม -- จริงๆ ตามสูตรเค้าให้ใช้ แยมแอปริคอต แต่ตัวเองไม่ค่อยชอบเลยเปลี่ยน รู้สึกจะได้สูตรนี้มาจากของ อลิส วอร์เตอร์ส เจ้าของร้าน เช ปานิซ (Chez Panisse) ที่เค้ามีชื่อมากๆ ที่เบิร์คลี่นะคะ

สำหรับเปลือกแอปเปิ้ล ถ้าซื้อเค้า แล้วไม่ได้เป็นออร์แกนิค เปลือกมันมีขี้ผึ้งที่เค้าเคลือบไว้ช่วยให้แอปเปิ้ลเก็บได้นานเวลาขนส่ง หรือไม่ก็ยาฆ่าแมลง เวลาจะใช้ต้องล้างด้วยน้ำสบู่ล้างผักแล้วขัดให้ดีๆ นะคะ

น้ำเชื่อมเวลาจะใช้ เอามาอุ่นแล้วใส่รัม (แทนเหล้าหวาน Calvados ตามสูตร) ปล่อยไว้บนเตาไฟอ่อนๆ พอรัมระเหยไป น้ำเชื่อมก็มีความซับซ้อนของกลิ่นรสเพิ่มขึ้น เพิ่มรสชาติได้มาก แล้วก็ขูดเปลือกส้มจีนโรยหน้าไอติมด้วย หอมดี แล้วก็รสขมนิดๆ เข้ากับของหวานๆ ได้ดี๊ดีค่ะ

Frozen Yogurt ที่ซื้อมาคราวนี้เป็นแบบไร้ไขมัน แต่จริงๆไม่อร่อยเท่า ถ้าเป็น Vanilla Bean Ice Cream จะเพอร์เฟคท์มาก แต่เวอร์ชั่นนี้ก็สำนึกผิดน้อยหน่อยนะคะ
