The other day I found a recipe for chocolate Wacky Cake, baked it and love it. So I tried a vanilla version here.

This spongy Wacky Cake, also known as Crazy Cake, and Depression Cake is commonly believed to  have been created as the result of rationing during World War II, when milk and eggs were scarce.

Ingredients:

For the Cake (adapted from Chocolate Crazy Cake (No Eggs, Milk, Butter or Bowls Recipe by Sweet Little Blue Bird)

For the Frosting (adapted from 1 Minute Frosting Recipe by Yummy Life)

• 1 cup white chocolate chips
• 1/4 cup  almond milk (or canned evaporated milk)
• 2 Tablespoons coconut oil (may substitute butter, canola or vegetable oil, if desired)
• 1/2 teaspoon vanilla extract
• 1 cup powdered sugar
• Sweetened coconut flakes to garnish (optional)

1 1/4 Stick Unsalted Butter (Softened)
1/4    Cup Powdered Sugar
1 1/2 Tablespoon Sugar
1/4    teaspoon salt

1      Cup plus 2 Tablespoons plus 2 teaspoons All-Purpose Flour
1/3   Cup Cornstarch (adding cornstarch makes the cookie crumbly)

Position the rack in the middle of the oven.  Preheat the oven to 300 degrees F.
Sift the powdered sugar, sugar and salt to combine with the butter, beat on medium speed or by hand until very fluffy and well blended.
Gradually sift the flour over the top of the butter mixture while stirring.
Fold in until well combined and lightly knead until smooth.
Make the dough into a disk and flatten it to about 1/3 inch thick.  Use cookie cutters to cut into shapes
Bake on parchment-lined cookie sheet about 35 minutes or until edge turned golden.
Cool on rack.
Sprinkle on top powdered sugar, turbinado sugar, or press a piece of chocolate chip in the middle, or dipped the end in chocolate frosting if desired.

For the Salad
1/2 Cup Shaved or Thinly Sliced Fennel Root
1 Cup Wild Arugula
10-12 Cherry Tomatoes
1/4 Cup Carrots
1/2 Cup Crumbled Gorgonzola Cheese

For Vinaigrette
Whisk together

Juice from 1 Lemon
2 Tablespoons Raw Honey
1/4 teaspoon Wasabi Paste
5 Tablespoons Olive Oil
1 teaspoon Apple Cider Vinegar
Salt and Pepper to taste

Combine the vegetable and the vinaigrette in a mixing bowl.  Mix well and use tongs to put in the tortilla cups (save the vinaigrettes to pour on top of the salad later to proven the cup from going soggy) topped with the crumble cheese before serving.

For Tortilla Cups

Whole Grain Tortillas (1 per person)
1/4 - 1/2 Stick Butter
Cooking Spray
Ramekin Cups

Preheat the oven to 350 degrees F.
Microwave the tortillas 8-10 seconds so they are easy to fold.
In the microwave, melt enough butter to brush on the tortillas (about 15-20 seconds)
Brush the butter on both sides of the tortilla.  Set in the cups and bake for 15-20 minutes
(I had to take the tortillas out of the cups towards the end and baked on a cookie sheet for about 8 minutes more to make it crispy)

แต่ก่อนแต่ไร คิดว่าเค้กนี่มันช่างทำยากเย็นเหลือเกิน ลองทำหลายครั้งก็ไม่ค่อยเกิดนะคะ เหม็นไข่บ้าง ขมๆ บ้าง เมื่อวานนี้อากาศเย็นๆ เกิดอยากทำขนม แต่ในตู้เย็นไม่เหลืออะไรเล้ย เนย ไข่ หมดเกลี้ยง เลยคิดเล่นๆ ว่า จะมีขนมอะไรบ้างน้าา ที่ทำได้แบบไม่ต้องใช้ส่วนผสมที่เราไม่มีเนี่ยะ พอดีเลยมาเจอสูตรเค้กแสนอร่อยนี่

เค้าเรียก Depression Cake หรือ Crazy Cake  หรือ Wacky Cake คร่าวๆ ลักษณะคงเหมือนขนมถังแตก ที่ฉันเคยได้ยินแม่เรียกตอนเด็กๆนั่นแหละ คือว่ากันว่า เค้กนี้มีคนคิดขึ้นมาในยุคเศรษฐกิจตกต่ำทั่วโลก (Great Depression) ช่วงหลังสงครามโลกครั้งที่สอง ที่อาหารพวก ไข่ นม เนย หายากมาก

ดูจากส่วนผสมแล้วไม่น่าจะออกมาเป็นเค้กได้ แต่ปรากฏว่า  โอ้ววว แสนอร่อย และไม่เหม็นไข่ ไม่ขมอย่างทุกที ถูกใจจริงๆ

วิธีทำก็แสนง่าย มาดูส่วนผสมกันค่ะ

ส่วนผสมเค้ก

• แป้งเอนกประสงค์ 1 1/2 ถ้วยตวง
• ผงโกโก้ 3 ช้อนโต๊ะ
• น้ำตาลทราย 1 ถ้วยตวง
• เบกกิ้งโซดา 1 ช้อนชา
• เกลือ 1/2 ช้อนชา
• น้ำส้มสายชู 1 ช้อนชา
• วนิลลา 1 ช้อนชา
• น้ำมันมะพร้าว 5 ช้อนโต๊ะ (ในอเมริกาหาง่ายหน่อย หอมดี สูตรเดิมเค้าใช้น้ำมันพืชธรรมดา)
• น้ำ 1 ถ้วยตวง

เปิดเตาอบที่ 350 องศาฟาเรนไฮ

นำส่วนผสมแห้งผสมกันในถาดอบสี่เหลี่ยม ขนาด 8 นิ้ว ที่ทำน้ำมันไว้ เค้กจะได้ไม่ติดถาดนะคะ ฉันร่อนส่วนผสมแห้งก่อนค่ะ จะได้คนง่ายหน่อย คนส่วนผสมให้เข้ากัน

กดแป้งให้เป็นหลุมเล็ก 2 หลุม หลุมใหญ่ 1 หลุม เหมือนในภาพ เทน้ำส้มสายชู และวนิลลา ลงไปในหลุมเล็กอย่างละหลุม และน้ำมันลงไปในหลุมใหญ่ เสร็จแล้วเทน้ำลงไป คนให้เนื้อเนียนเข้ากัน



เอาเข้าเตาอบ ชั้นกลาง อบ 35 นาที หรือเมื่อเอาไม้จิ้มฟันจิ้มลงไปดูแล้ว เค้กไม่ติดไม้ เวลาอบอาจแตกต่างกัน ระวังอย่าอบนานเกินไป


ทิ้งไว้ให้เย็น แล้วแต่งหน้าด้วย ฟร้อสติ้งตามชอบ ตามภาพข้างบน ใช้สูตรฟร้อสติ้งง่ายๆ สูตรนี้ค่ะ

ส่วนผสมฟร้อสติ้ง

• ช้อคโกแล็ตชิ้ป 1 ถ้วยตวง
• นมตราเหยี่ยว หรือนมอัลมอนด์ 1/4 ถ้วยตวง
• น้ำมันมะพร้าว หรือ น้ำมันพืช 2 ช้อนโต๊ะ
• วนิลลา 1/2 ช้อนชา
• น้ำตาลไอซิ่ง 1 ถ้วยตวง
• มะพร้าวขูดหวาน ไว้แต่งหน้า (ไม่มีก็ได้ ตามชอบ)

นำส่วนผสมทุกอย่าง นอกจากน้ำตาลมารวมกันในหม้อสเตนเลสเล็กๆ แล้วนำหม้ออีกใบที่ใหญ่กว่านิดหน่อย ใส่น้ำ ตั้งเตาให้น้ำเดือด นำหม้อที่มีส่วนผสมตั้งข้างบน ให้ไอน้ำร้อนทำให้ช้อคโกแล็ตละลาย (จะเอาเข้าไมโครเวฟก็ได้ ซัก 30 วินาที พอให้ช้อคโกแล็ตละลาย อย่าให้เดือด) คนส่วนผสมให้เข้ากันจนเนียน ผสมน้ำตาลไอซิ่ง (ตัวเองร่อนก่อน) ลงไป คนให้เข้ากันจนเนื้อเนียนนุ่ม นำไปแต่งหน้าเค้ก ขณะกำลังอุ่นๆ

I've been in the mood for baking again yesterday but too tired to go to the store.  With my empty fridge, I was pouring over the internet trying to find a recipe that does not need butter nor egg and Voilà! I stumble upon this super easy but absolutely scrumptious chocolate cake recipe.

I'm so happy with how it turned out as I have never been too pleased with any of the cakes I baked before -- no matter from scratch or from store-bought, ready-mix -- mine always had that yucky eggy smell and taste.  This recipe is just fantastic.
